Forerunners in the world of artisanal charcuterie, in perpetual search of quality, it took our artisanal pork butchers nearly 18 months to find an alternative to the use of nitrite salt and preservatives in our famous ham.
To achieve our goals, we looked at existing natural resources, particularly certain green vegetables with a high concentration of natural nitrate. Thus, we have elaborated a cooking broth based on vegetable juice and salt from Salies-de-Béarn to complete our aromatic decoction.
LE BELLOCQ® quickly became the new darling of demanding craftsmen.
As of 2019, our ham then receives the First Regional Prize of the National Trophy for the best home-cooked ham.
A tasty ham
Meat from certified IGP Sud-Ouest pigs, an aromatic decoction with vegetable juice and salt from Salies-de-Béarn are the keys to an inimitable taste.
An artisanal ham
Elaborated in the rules of art by our craftsmen pork butchers, the long churning and the cooking at low temperature confer an ideal texture to it.
